Fine & Fettle, a new American restaurant in the Canopy by Hilton SouthPark, opens Monday, June 15.
Executive chef Daniel Wheeler is behind the menu, which includes a mix of small plates and mains like roasted guinea hen ($25) and crab primavera ($27).
Most recently, Wheeler was the executive chef at Dot Dot Dot, a speakeasy-style bar and restaurant in Park Road Shopping Center. Dot Dot Dot is known for its cocktail program, but Wheeler’s menu received plenty of praise as well. Wheeler also worked in kitchens in Hickory and Morganton.
Menu: Fine & Fettle is open for breakfast, brunch, lunch, and dinner. For dinner, dishes range in price from $10 for truffle fries to $32 for hanger steak. One standout dish, Wheeler says, is the octopus ($19) with harissa romesco, pickled carrot, Salicornia, and lemon oil.
Cocktails: Expect innovative drinks behind the bar with David “Schmidty” Schmidt in charge. The award-winning mixologist is known as a “mad scientist” when making cocktails — from playing with fire to deconstructing drinks. The cocktail menu includes “No Shrubs” ($14) made with Lunazul tequila, lime, agave, strawberry, and red pepper, and “Game, Set, Matcha” ($15) with Botanist gin, matcha orgeat, lime, mint, and egg white.
Vibe: By day, the restaurant is a relaxed coffeehouse. By night, it’s an intimate restaurant. Fine & Fettle has a neutral color palette with pops of orange, plus a patio with limited seating.
Fine & Fettle isn’t your typical hotel restaurant, Wheeler says. “We’re not your cookie-cutter brand.”
About the hotel: Hilton’s Canopy boutique hotels all feel a little different, designed to fit the city they’re in. Canopy by Hilton SouthPark draws from the neighborhood’s history with “millwork finishes, marble countertops, and subtle earth tones throughout.” This is the first Canopy hotel in the Carolinas. Its exact location is 4905 Barclay Downs Drive, across the street from SouthPark mall.
