Pilot Brewing is the brainchild of Rachel Hudson, 31, and a veteran of NoDa Brewing.
Rachel cut her teeth in the Richmond beer scene and later worked in Colorado. She’s been in Charlotte the last two years and is now setting out on her own. Rachel and husband Jeff Hudson signed the lease for the 1,900-square-foot space.
“We don’t offer a flagship or signature beer, for we’re all small batch, all experimental, all the time,” Rachel told the Agenda.
When I tried to get her to tell me her current favorite beer, she replied, “I’m really excited for our Island Hopper and Cafe Latte Stout. It’s hard to suggest just one beer, especially when there are a lot of offerings with just 10-15 gallons available. But my most favorite small batch, at the moment, is the Cinnamon Bun Brown Ale brewed by one of our Brewtenders, Raelle Childers.
