As a yoga teacher, personal trainer, group exercise instructor and writer, Jen is all about finding and maintaining a healthy lifestyle – one that never makes you feel like you’re depriving yourself.
When we asked her for her take on a healthy, easy dinner that incorporated beer, she was not only up for the challenge, but came up with a recipe and variations that are officially at the top of our must-try list.
“This recipe for slow cooker beer chicken couldn’t be easier,” she says. “It requires only six ingredients and about 5 minutes to throw it all together. The combination of the taco seasoning, chiles, onion and garlic give this recipe all the spice it needs, and using beer as the cooking liquid adds another delicious dimension of flavor.”

Try the slow cooker beer chicken on top of roasted sweet potato rounds for a healthier take on “nachos.” Perfect for those looking to stick to a cleaner diet during football season! Be sure to get creative by adding your favorite toppings.
Or make your own burrito bowl…
Make your own burrito bowl by serving the slow cooker beer chicken over cauliflower rice with toppings of your choice. The cauliflower rice is a light and low-carb alternative to traditional rice. Load up your bowl with things like shredded cabbage, avocado slices, lime wedges and cilantro.
“I love making a quick spicy aioli of greek yogurt, a dollop of mayo, lime juice, minced canned chipotle peppers and salt,” Jen adds.

Try the slow cooker beer chicken over zucchini noodles, spooned on top of a baked sweet potato, topped with an egg and avocado slices or in tacos or enchiladas.
Six Ingredient Slow Cooker Beer Chicken
1.5 pounds boneless, skinless chicken thighs (about 6)
1 (1-ounce) packet of taco seasoning
1 (4-ounce) can diced green chiles
1 medium onion, diced
2 cloves garlic, minced
1 can of Michelob ULTRA (95 calories)
Salt and pepper to taste
Place chicken thighs in bottom of slow cooker and top with taco seasoning, green chiles, diced onion and garlic. Pour a can of Michelob ULTRA beer on the mixture and cover. Cook on low for 5-6 hours, or until easily shredded with a fork. Season with salt and pepper to taste.
